Mochi Donuts
Mochi Donuts (Pon de Ring)
These bouncy and chewy mochi donuts, inspired by the popular 'Pon de Ring' from Japan, are made from a choux-like pastry base with the addition of tapioca starch for their characteristic texture. They are deep-fried until golden and then glazed with matcha-flavored white chocolate.

๐จโ๐ณ Instructions
- 1
In a pot, combine milk, oil, and sugar. Heat the mixture while stirring until combined.
- 2
Add flour to the pot and mix vigorously until a thick dough forms a ball.
- 3
Add tapioca starch to the dough and continue to mix until fully incorporated and the dough is smooth.
- 4
Transfer the dough to a mixing bowl.
- 5
Crack one egg into a separate small bowl and whisk it.
- 6
Slowly add the whisked egg to the dough in the mixing bowl while beating with a hand mixer until the dough becomes smooth and forms a pipeable batter.
- 7
Transfer the batter to a piping bag. Pipe the dough onto squares of parchment paper to form donut shapes, typically a ring of connected balls.
- 8
Carefully place the piped donuts (with the parchment paper) into hot oil for deep frying. Fry until golden brown, then remove and drain on a wire rack.
- 9
For the glaze, melt white chocolate in a bowl. Sift matcha powder into the melted white chocolate and mix until smooth and evenly colored.
- 10
Dip each fried donut into the matcha glaze, ensuring an even coating.
- 11
Optionally, drizzle with additional white chocolate and sprinkle with crushed cookies for decoration before the glaze sets.
