Jordanian Lamb Kofta with Pomegranate Glaze - Jordan traditional dish

🧂 Ingredients

  • 500 g Ground lamb
  • 1 medium Yellow onion(very finely chopped)
  • 2 cloves Garlic cloves(finely chopped)
  • 1 tablespoon Fresh mint(coarsely chopped)
  • 0.5 tsp Ground allspice
  • 0.5 tsp Cayenne pepper
  • 0.5 tsp Ground nutmeg
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 tablespoon Pomegranate molasses

👨‍🍳 Instructions

  1. 1

In a medium bowl, combine the ground lamb, finely chopped onion, garlic, mint, allspice, cayenne pepper, nutmeg, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well distributed.

💡 Tip: Using your hands ensures the best distribution of ingredients.
  2. 2

Shape the mixture into 8-10 oval-shaped kofta (meatballs).

  3. 3

Heat a lightly oiled grill pan or outdoor grill to medium-high heat.

💡 Tip: Ensure the grill is hot before adding the kofta.
  4. 4

Grill the kofta for about 4-5 minutes per side, or until cooked through and nicely browned.

  5. 5

During the last 2-3 minutes of grilling, brush the kofta generously with pomegranate molasses, turning to coat evenly.

💡 Tip: This will create a beautiful glaze and add a tangy-sweet flavor.
  6. 6

Remove kofta from the grill and let rest for a few minutes before serving.

💡 Pro Tips

  • For extra flavor, you can add a pinch of ground cumin to the kofta mixture.
  • Serve with tahini sauce, rice, or a fresh salad.
  • Ensure the pomegranate molasses is good quality for the best glaze.

🔄 Variations

  • Add finely chopped parsley to the kofta mixture.
  • For a spicier kick, increase the cayenne pepper or add a pinch of red pepper flakes.
  • Grill shallots or cherry tomatoes alongside the kofta.
