🧂 Ingredients
- 500 g Ground lamb
- 1 medium Yellow onion, finely chopped
- 2 Garlic cloves, minced
- 1 tbsp Fresh mint, chopped
- 0.5 tsp Ground allspice
- 0.5 tsp Cayenne pepper
- 0.5 tsp Ground nutmeg
- 1 tsp Salt
- 0.5 tsp Black pepper
- 3 tbsp Pomegranate molasses
- 1 tbsp Olive oil (for cooking)
👨🍳 Instructions
- 1
Prepare the kofta mixture: In a medium bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped mint, allspice, cayenne pepper, nutmeg, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated. Be careful not to overmix.
- 2
Shape the kofta: Divide the mixture into 10-12 equal portions. Roll each portion into a cylindrical or oval shape, about 2-3 inches long. If time permits, refrigerate the shaped kofta for about 30 minutes to help them hold their shape during cooking.
- 3
Cook the kofta: Heat 1 tablespoon of olive oil in a large skillet or on a grill pan over medium-high heat. Add the kofta and cook for about 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4
Glaze the kofta: During the last 2-3 minutes of cooking, brush the kofta generously with pomegranate molasses. Continue to cook, turning the kofta to ensure they are evenly glazed and slightly caramelized.
- 5
Serve: Arrange the glazed kofta on a serving platter. Garnish with extra chopped mint or parsley if desired. Serve hot as an appetizer or with rice or pita bread as a main course.
