Layered Rye Bread Dessert
Rupjmaizes Kārtojums
A delightful and iconic Latvian dessert featuring layers of toasted rye breadcrumbs, sweet fruit jam, and whipped cream, creating a harmonious blend of textures and flavors.

🧂 Ingredients
- 200 g Dark rye bread(stale or fresh, cut into cubes)
- 2 tbsp Sugar(for toasting breadcrumbs)
- 0.5 tsp Cinnamon(ground)
- 1 cup Blackcurrant or lingonberry jam
- 400 ml Heavy cream(or whipping cream)
- 2 tbsp Powdered sugar(for whipping cream)
- 1 tsp Vanilla extract
- 0.5 cup Fresh berries(for garnish (optional))
- 2 tbsp Grated dark chocolate(for garnish (optional))
👨🍳 Instructions
- 1
Preheat oven to 180°C (350°F).
- 2
If using fresh rye bread, cut it into cubes. Spread the bread cubes on a baking sheet. Toast in the preheated oven for about 10-15 minutes, or until dry and lightly golden. Alternatively, toast in a dry frying pan.
- 3
Once toasted, let the bread cool slightly. Then, process it in a food processor or grate it to create coarse breadcrumbs. Mix the breadcrumbs with 2 tbsp of sugar and 0.5 tsp of cinnamon.
- 4
In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- 5
In a clear serving dish or individual glasses, begin layering the dessert. Start with a layer of rye breadcrumbs, followed by a layer of blackcurrant or lingonberry jam.
- 6
Add a layer of whipped cream on top of the jam. Repeat the layers (breadcrumbs, jam, cream) until all ingredients are used, finishing with a layer of whipped cream.
- 7
Cover the dish and refrigerate for at least 2-3 hours, or preferably overnight, to allow the flavors to meld and the breadcrumbs to soften.
- 8
Before serving, garnish with fresh berries and grated dark chocolate, if desired.
💡 Pro Tips
- ✓Using stale rye bread is ideal as it toasts more easily and crisply.
- ✓Ensure the cream is well-chilled before whipping for best results.
- ✓The longer the dessert chills, the better the flavors meld and the softer the texture becomes.
