Lithuanian Cabbage and Pork Stew

- 1 kg Pork shoulder(cut into 1.5-inch cubes)
- 500 g Sauerkraut(drained)
- 1 small head White cabbage(about 500g, shredded)
- 2 large Onions(sliced)
- 2 medium Carrots(grated)
- 3 cloves Garlic(minced)
- 3 Bay leaves
- 5 Allspice berries
- 10 Black peppercorns
- 3 tablespoons Sunflower oil
- 1.5 liters Water
- to taste Salt
- 15 Prunes(chopped (optional))
- 1 Apple(chopped (optional))
- 200 g Tomato puree((optional))
- 1 tablespoon Sweet paprika((optional))
- 1 tablespoon Marjoram((optional))

In a large pot or Dutch oven, combine the shredded white cabbage and drained sauerkraut.

In a separate skillet, heat sunflower oil over medium-high heat. Add the sliced onions and sauté until softened, about 5 minutes.

Add the pork cubes to the skillet and sear on all sides until browned. Add the browned pork and any accumulated juices to the pot with the cabbage.

Add the grated carrots, minced garlic, bay leaves, allspice berries, and black peppercorns to the pot. Pour in the water. Season with salt.

Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 hour.

If using, add the chopped prunes and apple to the pot. Stir in the tomato puree, paprika, and marjoram.

Cover and continue to simmer for another 1.5 hours, or until the pork is very tender and the flavors have melded. Stir occasionally.
