Malawi Beans with Greens

- 500 g Dried Beans(e.g., kidney beans, black-eyed peas, or a mix; soaked overnight)
- 500 g Leafy Greens(e.g., spinach, collard greens, pumpkin leaves; chopped)
- 1 large Onions(chopped)
- 2 medium Tomatoes(chopped)
- 2 cloves Garlic(minced)
- 2 tbsp Cooking Oil

- 1/4 tsp Black Pepper(freshly ground)

Drain and rinse the soaked beans. Place them in a pot and cover with fresh water. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until beans are tender but not mushy. Drain, reserving some of the cooking liquid.

While beans are cooking, heat cooking oil in a separate large pan or pot over medium heat. Sautรฉ chopped onions until softened, about 5 minutes.

Add minced garlic and chopped tomatoes to the pan. Cook until tomatoes soften and break down, about 5-7 minutes.

Add the chopped leafy greens to the pot. Stir them in, and add a little of the reserved bean cooking liquid or fresh water if needed to create some moisture.
