Maldivian Seafood Kothu
A flavorful and hearty Maldivian street food dish made with shredded roti, mixed seafood, vegetables, and aromatic spices.

🧂 Ingredients
- 4 pieces Roti (Chapati or Paratha)(stale, torn into small pieces)
- 300 g Mixed Seafood(shrimp, squid, fish chunks, cleaned and chopped)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch Ginger(grated)
- 2 Green chilies(finely chopped (adjust to taste))
- 10 Curry leaves
- 1 tsp Turmeric powder
- 1 tsp Chili powder(adjust to taste)
- 1 tsp Coriander powder
- 0.5 tsp Garam masala
- 2 medium Tomatoes(finely chopped)
- to taste Salt
- 2-3 tbsp Oil
- 1 tbsp Lime juice
- a handful Cilantro(chopped, for garnish)

Heat oil in a large pan or wok over medium-high heat. Add chopped onions and sauté until translucent.

Add minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until fragrant.

Add curry leaves and sauté for a few seconds.

Stir in turmeric powder, chili powder, coriander powder, and garam masala. Cook for 30 seconds until spices are fragrant.

Add chopped tomatoes and cook until they soften and the oil starts to separate.

Add the mixed seafood and salt. Cook until the seafood is just cooked through, about 5-7 minutes depending on the size of the pieces.

Add the torn roti pieces to the pan. Mix well with the seafood and spice mixture, ensuring the roti is coated.

Stir-fry for another 5-7 minutes, breaking up the roti further and allowing it to absorb the flavors. If it seems dry, add a splash of water.

Drizzle with lime juice and toss gently. Garnish with fresh cilantro.
