Namibian Fish Stew

- 1 large Onion(chopped)
- 3 cloves Garlic cloves(minced)
- 2 medium Carrots(diced)
- 2 Celery stalks(diced)
- 4 tbsp Tomato puree
- 1 tsp Dried oregano
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 120 ml Dry white wine(optional)
- 500 ml Fish or vegetable broth
- 2 tbsp Fresh parsley(chopped, for garnish)

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, diced carrots, and diced celery. Cook, stirring occasionally, until softened, about 5-7 minutes.

Stir in the tomato puree, dried oregano, cumin, smoked paprika, salt, and pepper. Cook for 2-3 minutes, stirring constantly, until the spices are fragrant and the tomato puree darkens slightly.
