- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Butter
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 3 tbsp Dijon mustard
- 200 ml Heavy cream
- 100 ml Chicken broth
- 2 tbsp Fresh parsley(chopped, for garnish)
- 800 g Potatoes(waxy, for boiling)
- 4 large Apples(tart, e.g., Elstar or Goudreinet)
- 2 tbsp Sugar(or to taste)

- 1 tsp Lemon juice

Season chicken breasts with salt and pepper.

Melt 1 tbsp of butter in a large skillet over medium-high heat. Sear chicken breasts for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.

Add the remaining 1 tbsp of butter to the skillet. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in Dijon mustard, heavy cream, and chicken broth. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly. Season with salt and pepper to taste.

Return the chicken breasts to the skillet and spoon the sauce over them. Let simmer for 2-3 minutes to heat through.

While the chicken is simmering, peel and quarter the potatoes. Place them in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until tender, about 20 minutes. Drain well.

For the apple sauce, peel, core, and chop the apples. Place them in a saucepan with sugar, cinnamon, and 2 tbsp of water. Cook over medium heat, stirring occasionally, until the apples are soft and have broken down, about 15-20 minutes. Stir in lemon juice.
