Macedonian Cheese Rolls
Kifli are soft, fluffy, and slightly sweet rolls popular in Macedonian cuisine, often filled with feta cheese and sprinkled with sesame seeds. They are perfect as a snack, side dish, or for breakfast.

- 4 cups All-purpose flour(+ extra for dusting)
- 1 cup Lukewarm milk
- 20 g Active dry yeast
- 1.5 tsp Sugar
- 2 tsp Baking powder
- 1 tsp Salt
- 25 ml Vegetable oil
- 2 large Eggs(separated)
- 125 g Feta cheese, crumbled
- 125 g Butter, softened
- 1 tbsp Sesame seeds(for topping)

In a large bowl, combine lukewarm milk, sugar, 1 tablespoon of flour, and yeast. Let it stand for 10 minutes until foamy.

Add baking powder, salt, vegetable oil, egg whites, and about 3 cups of flour to the yeast mixture. Stir until well combined. Gradually add more flour as needed to form a soft dough. Knead on a lightly floured surface for about 10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough and knead for another 5 minutes. Divide the dough into 8 equal portions. Roll each portion into a circle about the size of a medium pizza.

Cut each circle into 8 equal triangular slices. Place a tablespoon of crumbled feta cheese at the widest part of each triangle. Roll each slice from the wide end towards the tip, enclosing the cheese.

Place the rolled kifli on a lightly greased baking sheet. Cover and let them rest for about 20 minutes.

Whisk the egg yolks and brush each kifli with the mixture. Sprinkle with sesame seeds. Bake in a preheated oven at 180ยฐC (360ยฐF) for 15-20 minutes, or until golden brown.
