Norwegian Cod and Root Vegetable Soup

- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 2 medium Carrots(peeled and cut into strips or small dice)
- 1 large Parsnips(peeled and chopped)
- 1/2 small Celeriac(peeled and chopped)
- 2 medium Potatoes(peeled and cut into 1-inch pieces)
- 3 cups Fish stock
- 2 cups Milk
- 1 cup Heavy cream
- 1.5 tsp Salt(plus more to taste)
- 1 tsp Black pepper(coarsely ground, plus more to taste)
- 1/4 cup Fresh dill(chopped, for garnish)

Melt the butter in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 8 minutes. Add the minced garlic and cook for 1 minute more until fragrant.

Add the carrots, parsnips, celeriac, and potatoes to the pot. Pour in the fish stock and bring to a boil. Reduce the heat to medium, cover, and simmer for about 20-25 minutes, or until the vegetables are tender.
