Norwegian Lamb with Root Vegetables

- 2 medium Parsnips(peeled and cut into 1-inch chunks)
- 1 medium Rutabaga (swede)(peeled and cut into 1-inch chunks)
- 750 ml Lamb or beef broth
- 3 sprigs Fresh thyme sprigs
- 2 leaves Bay leaves
- 0.25 cup Fresh parsley(chopped, for garnish)

In a bowl, toss the lamb cubes with flour, salt, and pepper until evenly coated.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the lamb in batches, about 3-4 minutes per side, until nicely seared. Remove lamb to a plate and set aside.
