Omani Date and Cardamom Rice
A fragrant and subtly sweet rice dish, this Omani specialty combines fluffy basmati rice with the natural sweetness of dates, the warmth of cardamom, and a hint of cinnamon. It's a delightful side dish or a light main.

- 1 cup Basmati rice
- 1.75 cups Water
- 3 large Dates(pitted and chopped)
- 2 Cardamom pods(lightly crushed)
- 11 Whole cloves
- 1 tbsp Coconut oil
- 0.25 tsp Salt(or to taste)

In a medium saucepan, heat the coconut oil over medium heat. Add the crushed cardamom pods and whole cloves, and sautรฉ for 1-2 minutes until fragrant.

Add the chopped dates to the pan and stir for another minute.

Add the basmati rice to the pot and stir to combine with the spices and dates. Cook for about 1 minute.

Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 12-15 minutes, or until the rice is cooked and the water is absorbed.

Once cooked, remove the whole cloves and cardamom pods. Stir in the salt. Let it rest for a few minutes before serving.
