🧂 Ingredients

  • 2 lb each Whole fish (e.g., red snapper, silk snapper)(cleaned and scaled)
  • 4 large Banana leaves(warmed to soften)
  • 2 inch pieces Fresh ginger(thinly sliced)
  • 4 cloves Garlic(thinly sliced)
  • 4-6 Kaffir lime leaves(thinly sliced or bruised)
  • 4 tbsp Dark mushroom-flavored soy sauce
  • 2 tbsp Sesame oil
  • to taste Salt
  • 2 Scallions(thinly sliced for garnish (optional))
  • for serving Lime wedges

👨‍🍳 Instructions

  1. 1

Rinse the fish under cold water and pat dry with paper towels. Make several ½-inch deep cuts along the sides of each fish.

  2. 2

Gently run the banana leaves over a low flame or hot burner to soften them. This prevents cracking when wrapping.

  3. 3

Place a softened banana leaf on a clean surface or baking sheet. Place one fish on top of the leaf.

  4. 4

Stuff the sliced ginger, garlic, and kaffir lime leaves into the cuts on the fish and into the cavity.

  5. 5

In a small bowl, whisk together the soy sauce and sesame oil. Brush half of this mixture over the fish and into the cavity.

  6. 6

Sprinkle the fish with salt to taste. Brush the remaining soy sauce and sesame oil mixture over the top of the fish.

  7. 7

Carefully wrap the fish completely in the banana leaf, creating a sealed package. You can secure with kitchen twine if needed.

  8. 8

Grill the wrapped fish over medium-high heat for approximately 15-20 minutes, turning once, until the fish is cooked through and flakes easily. Alternatively, bake at 375°F (190°C) for 20-25 minutes.

  9. 9

Carefully unwrap the fish. Garnish with sliced scallions if desired and serve immediately with lime wedges.

💡 Pro Tips

  • If banana leaves are unavailable, parchment paper or foil can be used, though the banana leaf imparts a unique flavor.
  • Ensure the fish is fresh for the best taste.
  • Serve with steamed rice, taro, or yams.

🔄 Variations

  • Add a few slices of chili for a touch of heat.
  • Marinate the fish in the soy sauce and sesame oil mixture for 30 minutes before wrapping for a deeper flavor.
