- 1 large Onion(chopped)
- 1 medium Bell pepper(diced (optional))
- 2 tbsp Tomato paste
- 2 Bay leaves
- 1 tsp Black peppercorns

- 1/2 cup Fresh parsley(chopped, for garnish)

- to taste Vinegar or lemon juice

Place the chicken in a large pot, cover with water, and bring to a boil. Skim off any foam that rises to the surface.
