Serbian Lamb Stew with Vegetables

- 1.5 kg Lamb shoulder(cut into 2-inch cubes)
- 3 tbsp Vegetable oil
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 3 medium Carrots(peeled and chopped)
- 2 medium Parsnips(peeled and chopped)
- 500 g Potatoes(peeled and cubed)
- 1 liter Beef broth
- 2 tbsp Tomato paste
- 2 tsp Sweet paprika
- 1 tsp Dried marjoram
- 1.5 tsp Salt(or to taste)
- 1 tsp Black pepper(or to taste)
- 1/4 cup Fresh parsley(chopped, for garnish)

Pat the lamb cubes dry with paper towels. Season generously with salt and pepper.

Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the lamb in batches, searing on all sides. Remove lamb from the pot and set aside.

Add chopped onions to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in the chopped carrots and parsnips. Cook for 5 minutes, stirring occasionally.

Add the tomato paste and sweet paprika, stirring to coat the vegetables. Cook for 1 minute.

Return the browned lamb to the pot. Pour in the beef broth and add dried marjoram. Bring to a simmer, then reduce heat to low.
