Kallaloo with Rice
A vibrant and nutritious dish featuring a stew made from leafy greens (often spinach or callaloo), palm oil, and seasoned with onions, peppers, and sometimes fish or meat. Served typically with rice.

- 1 kg Callaloo or spinach(fresh or frozen, chopped)
- 150 ml Palm oil
- 1 large Onion(chopped)
- 1 piece Scotch bonnet pepper(to taste, whole or chopped)
- 500 ml Fish stock or water
- to taste Salt
- 1-2 pieces Maggi cubes(optional)
- 200 g Cooked fish or shrimp(optional, flaked or whole)
- as needed Rice(for serving)

If using fresh greens, wash them thoroughly and chop. If using frozen, thaw and squeeze out excess water.

In a pot, heat the palm oil over medium heat. Add the chopped onion and sautรฉ until translucent, about 5 minutes.

Add the chopped callaloo or spinach to the pot. Stir well.

Pour in the fish stock or water. Add the Scotch bonnet pepper (whole or chopped). Season with salt and Maggi cubes (if using).

Bring the mixture to a simmer. If using fish or shrimp, add it now. Cover and cook for about 30-40 minutes, stirring occasionally, until the greens are tender and the flavors have melded. The oil should start to separate and rise to the top.

Taste and adjust seasoning. Remove the whole Scotch bonnet pepper if used.
