- 3 medium Potatoes(peeled and cut into 1-2 cm cubes)
- 1 medium Onion(finely chopped)

- 3 tbsp Butter
- 1 tbsp All-purpose flour
- 1.5 l Water
- 500 ml Vegetable broth(optional, for richer flavor)
- 1 Bay leaf
- 0.5 tsp Dried marjoram(crumbled)
- 1 tsp Salt(or to taste)
- 0.25 tsp Black pepper(freshly ground, or to taste)
- 4 tbsp Sour cream(for serving (optional))
- 2 tbsp Fresh parsley(chopped, for garnish)

Melt the butter in a large saucepan over medium heat. Add the chopped onion and sautรฉ until softened and translucent, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the sliced mushrooms to the pot. Cook, stirring occasionally, until they release their liquid and start to brown slightly, about 5-8 minutes.

Pour in the water and vegetable broth (if using). Add the bay leaf, crumbled marjoram, salt, and pepper. Bring the soup to a boil.
