Sudanese Peanut Stew

A hearty and flavorful vegetarian stew from Sudan, featuring sweet potatoes, spinach, and tomatoes, all brought together by the rich creaminess of peanut butter. This dish is a comforting and nutritious staple, often served with rice or Kisra.

- 1 Tbsp Olive oil
- 1 medium Sweet onion(chopped)
- 2 cloves Garlic(minced)
- 2 Tbsp Tomato paste
- 2 large Sweet potatoes(peeled and cut into bite-sized pieces)
- 1 (15 oz) can Diced tomatoes
- 2.5 c Vegetable stock
- 1 bunch Spinach(cleaned, stemmed and chopped)
- 0.5 c Peanut butter(unsweetened, creamy or crunchy)
- 2 c Cooked brown rice(for serving)
- to taste Salt
- to taste Black pepper

Heat the olive oil in a large soup pot over medium-high heat. Add the chopped onion, season with salt and pepper, and cook until fragrant and translucent.

Stir in the minced garlic and cook, stirring, for another minute before stirring in the tomato paste.

Add the sweet potatoes, diced tomatoes with their juices, and vegetable stock. Bring to a boil, then reduce heat, cover, and simmer until the potatoes are tender.

Stir in the chopped spinach and peanut butter. Continue to stir until the peanut butter is fully melted and the spinach is wilted.

Serve the stew hot, divided into shallow bowls and topped with cooked brown rice.
