Sudanese Chicken Peanut Stew

- 3 tbsp Vegetable oil
- 1 large Yellow onion(diced)
- 6 cloves Garlic(minced)
- 1 tbsp Ginger(freshly grated)
- 15 oz can Crushed tomatoes
- 1 quart Chicken stock
- 1 cup Smooth peanut butter
- 1.5 cups Roasted peanuts(chopped)
- 1 tbsp Ground coriander
- 1 tsp Cayenne pepper(or more, to taste)

In a heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat.
