Skånsk Äggakaka med Stekt Fläsk
A hearty and traditional Scanian egg cake, similar to a thick pancake or a baked omelet, served with crispy fried pork belly and lingonberries. It's a comforting and satisfying dish that highlights simple, quality ingredients.

🧂 Ingredients
- 500 g Salted pork belly(sliced)
- 7 large Eggs
- 1.5 dl All-purpose flour
- 6 dl Milk(3% fat)
- 1 tsp Salt
- 1 krm Black pepper
- 1 tbsp Butter(for frying)
- Lingonberries(rårörda (mashed) or jam, for serving)
👨🍳 Instructions
- 1
Fry the pork belly slices in a dry frying pan until crispy. Remove the pork and set aside, keeping it warm. Reserve some of the rendered fat for cooking the äggakaka.
💡 Tip: You can also bake the pork belly in the oven to keep it warm while you make the egg cake. - 2
In a bowl, whisk together the eggs, flour, milk, salt, and pepper until you have a smooth batter.
💡 Tip: Ensure there are no lumps in the batter for a smooth texture. - 3
Heat the reserved pork fat (or add a tablespoon of butter if needed) in the same frying pan over medium heat. Pour in the egg batter.
💡 Tip: As the batter begins to set, use a spatula to gently pull the cooked edges towards the center, allowing the uncooked batter to flow underneath. This helps create an even thickness. - 4
Once the top is mostly set but still a little loose, carefully slide a plate or a lid over the pan and flip the äggakaka. Slide it back into the pan to cook the other side.
- 5
Cook the second side until fully set and golden brown. Slide the finished äggakaka onto a serving plate.
💡 Tip: Serve immediately. - 6
Serve the Skånsk Äggakaka topped with the crispy fried pork belly and a side of lingonberries.
💡 Tip: A simple green salad or pickled cucumber can also be served alongside.
💡 Pro Tips
- ✓Using the rendered fat from the pork belly adds a wonderful flavor to the äggakaka.
- ✓Don't overmix the batter once the potato is added, if using a recipe that includes it.
- ✓The key is to achieve a golden crust on both sides while keeping the inside tender and moist.
