Maklouba-Style Yam and Fish
A deconstructed take on the classic layered dish, this Togolese-inspired preparation features tender pieces of fish and sweet yam, simmered in a flavorful broth with aromatic spices.

- 600 g Yam(peeled and cut into 1-inch cubes)
- 1 large Onion(chopped)
- 4 cloves Garlic cloves(minced)

- 400 g Tomatoes(diced)
- 3 cups Fish or vegetable broth
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 0.5 teaspoon Coriander powder
- 0.25 teaspoon Cayenne pepper(or to taste)
- 2 tablespoons Vegetable oil
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and sautรฉ until softened, about 5 minutes.

Add the minced garlic and grated ginger, and cook for 1 minute until fragrant. Stir in the turmeric, cumin, coriander, and cayenne pepper, and cook for another minute, stirring constantly.

Add the diced tomatoes and cook for 2-3 minutes, breaking them up with a spoon.

Add the cubed yam and the fish or vegetable broth. Season with salt and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the yam is tender.

Gently add the fish chunks to the pot, ensuring they are submerged in the liquid. Cover and cook for another 10-15 minutes, or until the fish is cooked through and flakes easily.
