Ugandan Groundnut Stew
Ebinyebwa
A rich and creamy stew made from groundnuts (peanuts), often served as a side dish or a main course with staples like matoke or rice. It has a slightly sweet and nutty flavor, with the oil from the peanuts naturally separating to the top when cooked.

๐ง Ingredients
- 500 g Raw groundnuts(preferably with their pink coating intact)
- 1 large Onion(finely chopped)
- 2 medium Tomatoes(finely chopped)
- 2 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 4 cups Water(adjust for desired consistency)
- 2 tbsp Vegetable oil
- 1 tbsp Salt(or to taste)
- 1 tbsp Curry powder
๐จโ๐ณ Instructions
- 1
Grind the raw groundnuts into a fine paste using a food processor or blender. If using whole peanuts, roast them lightly first for enhanced flavor, but ensure they are not burnt.
- 2
In a saucepan, heat the vegetable oil over medium heat. Add the chopped onions and sautรฉ until golden brown.
- 3
Add the minced garlic and grated ginger to the pan and sautรฉ for another minute until fragrant.
- 4
Add the chopped tomatoes and cook, stirring and mashing, until they break down and form a sauce-like consistency.
- 5
Stir in the curry powder and cook for a minute to release its aroma.
- 6
Add the groundnut paste to the saucepan and mix well with the tomato and onion mixture.
- 7
Gradually add the water, stirring continuously to form a smooth sauce. Start with about 2 cups and add more as needed to reach your desired consistency.
- 8
Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for at least 30-45 minutes, stirring occasionally to prevent sticking. The stew is ready when it thickens and the peanut oil starts to separate and rise to the surface.
- 9
Season with salt to taste. Adjust water if the stew becomes too thick.
๐ก Pro Tips
- โUsing raw groundnuts with their pink coating intact contributes to the stew's characteristic color and flavor.
- โThe key to a good groundnut stew is slow simmering to allow the flavors to meld and the peanuts to soften.
- โIf the stew is too thick, add more hot water gradually until the desired consistency is reached.
- โEbinyebwa is traditionally served with matoke (steamed green bananas), posho (cornmeal porridge), or rice.
