Creamy Slow Cooker Pork Chile Verde
A comforting and flavorful take on the traditional Mexican dish, adapted for the American slow cooker. Tender pork is simmered in a vibrant green sauce made with roasted tomatillos and poblano peppers, finished with a touch of cream for richness.

- 2 lbs Tomatillos(husks removed and rinsed)
- 3 large Poblano peppers(seeded and roughly chopped)
- 1 large Yellow onion(chopped)

- 2 cups Chicken broth
- 1 tbsp Cumin
- 1 tsp Dried oregano
- 1.5 tsp Salt(or to taste)

- 0.5 cup Fresh cilantro(chopped, for garnish)

Preheat broiler. Place tomatillos and poblano peppers on a baking sheet and broil for 5-7 minutes, turning occasionally, until charred and softened.

Once cooled slightly, remove skins from tomatillos and discard stems and seeds from poblanos. Roughly chop the roasted tomatillos and poblanos.

In a blender, combine the chopped tomatillos, poblanos, onion, garlic, chicken broth, cumin, and oregano. Blend until smooth.

Place the cubed pork shoulder in a 6-quart slow cooker. Season with salt and pepper.

Pour the blended tomatillo mixture over the pork in the slow cooker. Stir to combine.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is tender and easily shreds.
