Albanian Chicken with Mushrooms
A comforting and flavorful dish featuring tender chicken pieces simmered with earthy mushrooms in a rich, savory sauce, often enhanced with herbs and a touch of cream or yogurt.

🧂 Ingredients
- 800 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 400 g Mushrooms(sliced (cremini or white button))
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 250 ml Chicken broth
- 100 ml Heavy cream or plain yogurt
- 2 tbsp Olive oil
- 1 tbsp All-purpose flour
- 2 tbsp Fresh parsley(chopped, for garnish)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)

Season chicken pieces with salt and pepper.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken from the skillet and set aside.

Add chopped onion to the same skillet and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Add sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 8-10 minutes.

Sprinkle flour over the mushroom and onion mixture and stir for 1 minute to cook out the raw flour taste.

Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and tender.

Stir in the heavy cream or yogurt. Heat through gently, but do not boil if using yogurt. Season with additional salt and pepper to taste.
