Albanian Baked Chicken and Rice
A comforting one-dish meal where chicken drumsticks are baked with seasoned rice, vegetables, and flavorful broth, resulting in moist chicken and fluffy rice.

- 10 Chicken drumsticks
- 1 tbsp Paprika
- 1 tbsp Dried oregano
- 1 tsp Salt
- 0.5 tsp Black pepper(freshly ground)
- 0.5 tsp Cayenne pepper(or to taste)
- 2 tbsp Butter or Olive oil
- 1 Yellow onion(finely chopped)
- 5 Garlic cloves(minced)
- 2 tbsp Tomato paste
- 450 g Basmati rice(rinsed)
- 1 L Chicken broth
- 200 g Frozen peas
- 15 g Fresh parsley(chopped, for garnish)

Preheat oven to 180°C (350°F).

In a small bowl, mix paprika, oregano, salt, black pepper, and cayenne pepper. Rub this mixture all over the chicken drumsticks.

Melt butter or heat olive oil in a Dutch oven or oven-safe skillet over medium-high heat. Sear the chicken drumsticks for 3-4 minutes per side until golden brown. Remove chicken and set aside.

Add the chopped onion to the same pot and sauté until softened, about 5 minutes. Add minced garlic and tomato paste, cook for 1 minute until fragrant.

Add the rinsed rice and stir for 2 minutes to toast the grains. Pour in the chicken broth and bring to a boil.

Nestle the seared chicken drumsticks into the rice mixture. Add the frozen peas.

Cover tightly and bake for 35-40 minutes, or until the rice is tender and the chicken is cooked through.
