- 8 cloves Garlic(minced)
- 400 g Mixed mushrooms(such as porcini, chanterelles, or cremini, cleaned and sliced)
- 200 ml Dry white wine
- 250 ml Chicken broth
- 2 tbsp Fresh parsley(chopped)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)

Season the chicken pieces generously with salt and pepper.

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Work in batches if necessary to avoid overcrowding the pan. Remove chicken and set aside.

Add the minced garlic to the same pot and sautรฉ for about 1 minute until fragrant, being careful not to burn it.

Add the sliced mushrooms to the pot and cook, stirring occasionally, until they release their moisture and start to brown, about 5-7 minutes.

Pour in the dry white wine and scrape the bottom of the pot to deglaze, loosening any browned bits. Let the wine simmer and reduce by about half.

Return the browned chicken pieces to the pot. Add the chicken broth. Bring the liquid to a simmer.

Cover the pot, reduce the heat to low, and let it simmer gently for about 30-35 minutes, or until the chicken is cooked through and tender.
