Moamba de Ginguba com Frango
A rich and flavorful Angolan chicken stew made with peanut butter, tomatoes, and okra, often served with funge (a cornmeal or cassava porridge). This dish highlights the use of groundnuts, a staple in Angolan cuisine.

- 1.2 kg Chicken pieces(skinless and boneless, cut into 2-3 cm pieces)
- 500 g Roasted peanuts(unsalted, skinless)
- 300 g Fresh green okra(trimmed and cut into pieces)
- 2 large Lemons(juice only)
- 100 g Tomatoes(cut into pieces)
- 100 g Onions(cut into pieces)
- 3 cloves Garlic cloves
- 30 ml Olive oil
- 500 ml Water
- 2 tsp Salt
- 2 tsp Piri piri chilli (gindungo chilli)(or to taste)

Grind the roasted peanuts in a food processor or blender until finely ground. Set aside.

In a food processor, combine tomatoes, onions, garlic, and olive oil. Process until smooth.

Transfer the tomato-onion mixture to a large pot or Dutch oven. Add water and 150g of the ground peanuts. Stir well to combine.

Add the chicken pieces, salt, and piri piri chilli to the pot. Stir to coat the chicken.

Bring the mixture to a boil, then reduce heat, cover, and simmer for 25 minutes.

While the stew simmers, prepare the okra. Rinse it thoroughly and dry it with a tea towel. Remove the ends and cut into 3 cm pieces.

Add the prepared okra to the simmering stew. Stir gently, cover, and continue to cook for another 10 minutes, or until the okra is tender.

Stir in the remaining ground peanuts to thicken the sauce. Simmer for a final 5 minutes.
