Honey Joys
Classic Australian no-bake treats made with cornflakes, butter, sugar, and honey, baked in mini muffin tins. A beloved childhood favourite perfect for school fetes and parties.

- 90g Unsalted Butter(Cut into cubes for easier melting.)
- 100g Granulated Sugar(White granulated sugar.)
- 2 tbsp Honey(Any type of honey will work.)

Preheat your oven to 150ยฐC (300ยฐF). Line a 24-cup mini muffin tin (patty pans) with paper or silicone liners.

In a medium saucepan over medium-low heat, combine the cubed butter, granulated sugar, and honey. Stir continuously until the butter is completely melted and the sugar has dissolved. Do not boil; you should see a smooth, glossy mixture.

Remove the saucepan from the heat. Add the cornflakes to the warm honey mixture. Gently stir with a spatula or large spoon until all the cornflakes are evenly coated. Be careful not to crush the cornflakes too much.

Working quickly while the mixture is still warm and pliable, spoon the cornflake mixture evenly into the prepared mini muffin liners. Press down lightly to compact the mixture in each case.

Bake in the preheated oven for 10 minutes, or until the edges are lightly golden brown and the tops are set. The Honey Joys should not be dark brown. Remove from the oven and let them cool completely in the muffin tin before attempting to remove them. This allows them to firm up properly.
