Barbadian Breadfruit and Saltfish Bake
A savory and comforting bake featuring tender boiled breadfruit layered with flaky saltfish, a creamy béchamel-style sauce, and a hint of spice, all baked until golden brown. This dish is a delightful way to enjoy two of Barbados' beloved ingredients.

🧂 Ingredients
- 1 large Breadfruit(peeled, cored, and cut into 1-inch chunks)
- 1 lb Saltfish (Cod)(soaked overnight and de-boned)
- 4 tablespoons Butter
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 4 tablespoons All-purpose flour
- 3 cups Milk(whole milk)
- 1/4 teaspoon Nutmeg(freshly grated)
- 1/2 teaspoon Black pepper(freshly ground)
- 1/2 Scotch bonnet pepper(finely minced (optional, seeds removed))
- 1 cup Cheddar cheese(grated (optional, for topping))
- 1/4 cup Breadcrumbs(panko or regular (optional, for topping))
👨🍳 Instructions
- 1
Place the breadfruit chunks in a large pot, cover with water, add a pinch of salt, and bring to a boil. Cook until fork-tender, about 20-25 minutes. Drain well.
- 2
While the breadfruit is cooking, place the soaked saltfish in a saucepan, cover with fresh water, and simmer for about 10 minutes to further tenderize and remove excess salt. Drain, flake the fish, and discard any bones.
- 3
In a separate saucepan, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- 4
Whisk in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk until smooth. Bring to a gentle simmer, stirring constantly, until the sauce thickens.
- 5
Stir in the grated nutmeg, black pepper, and minced scotch bonnet pepper (if using). Season with salt to taste, keeping in mind the saltiness of the fish.
- 6
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- 7
In the baking dish, layer half of the boiled breadfruit chunks. Top with half of the flaked saltfish. Pour half of the sauce over the layer.
- 8
Repeat the layers with the remaining breadfruit, saltfish, and sauce.
- 9
If desired, sprinkle the top with grated cheddar cheese and breadcrumbs.
- 10
Bake for 30-40 minutes, or until the top is golden brown and the sauce is bubbling.
💡 Tip: Let it rest for 5-10 minutes before serving.
💡 Pro Tips
- ✓Soaking the saltfish overnight is crucial to remove excess salt. Change the water a few times.
- ✓For a smoother sauce, you can strain it after thickening.
- ✓If you don't have scotch bonnet pepper, a pinch of cayenne pepper can be used for a mild heat.
