- 3 tbsp Vegetable oil
- 2 large Onions(chopped)
- 2 large Bell peppers (any color)(chopped)
- 6 cloves Garlic(minced)
- 4 medium Tomatoes(chopped)
- 1 bunch Cilantro(chopped)
- 2 tbsp Achiote paste(or to taste)
- 4 cups Chicken broth or water
- 1 tsp Allspice berries
- 1 tsp Cumin
- 1 tsp Black pepper
- to taste Salt
- 1 Optional: Scotch bonnet pepper(whole, for heat)
