Bulgarian Pork with Prunes

Soak the dried prunes in warm water for about 15-20 minutes, then drain. Pat the pork cubes dry and season with salt and pepper. Heat oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the pork cubes on all sides in batches. Remove the pork and set aside.

Add the chopped onions to the pot and sautรฉ until softened and lightly browned, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
