- 2 large Onions(chopped)
- 6 cloves Garlic(minced)
- 2 inch piece Ginger(grated)
- 2 medium Sweet potatoes(peeled and cut into 1-inch chunks)
- 400 g Crushed tomatoes(can)
- 4 cups Chicken broth
- 1 cup Creamy peanut butter(natural, unsweetened)
- 1 tsp Ground coriander
- 1/4 tsp Cayenne pepper(or to taste)

- 1/4 cup Fresh cilantro(chopped, for garnish)

Season the chicken pieces generously with salt and pepper. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides, working in batches if necessary. Remove the chicken and set aside.
