- 1.5 kg Chicken pieces(Bone-in, cut into serving sizes (thighs, drumsticks, wings))
- 3 large Ripe plantains(peeled and cut into 1-inch thick rounds)
- 2 large Onions(1 chopped, 1 sliced)
- 2 medium Bell peppers(1 red, 1 green, deseeded and sliced)
- 4 medium Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1/2 cup Vegetable oil
- 1 cup Chicken broth
- 2 tbsp Tomato paste
- 1 tbsp Curry powder
- 1 tsp Thyme(dried)
- 1 leaf Bay leaf
- to taste Salt
- to taste Black pepper
- 1 small Optional: Scotch bonnet pepper(finely chopped, for heat)

Season chicken pieces with salt, pepper, and curry powder. Set aside.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove chicken and set aside.

In the same pot, add sliced onions and cook until softened, about 5 minutes. Add chopped tomatoes, minced garlic, and grated ginger. Cook for another 5-7 minutes until tomatoes break down.

Stir in tomato paste, dried thyme, and bay leaf. Cook for 2 minutes until fragrant.

Return the browned chicken to the pot. Add chicken broth and bring to a simmer. Cover and cook for 20 minutes, or until chicken is almost cooked through.

Add the plantain rounds and sliced bell peppers to the pot. If using, add the chopped scotch bonnet pepper. Stir gently to combine.
