Prairie Wild Rice and Mushroom Stuffed Squash

- 1 cup Wild rice blend(rinsed)
- 2.5 cups Vegetable broth
- 3 tbsp Olive oil
- 250 g Cremini mushrooms(sliced)
- 100 g Shiitake mushrooms(stems removed, sliced)
- 1 medium Yellow onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 tbsp Fresh sage(chopped)
- 1 tsp Fresh thyme(chopped)
- 1/2 cup Pecans(chopped, toasted)
- 1/4 cup Cranberries(dried)

Preheat oven to 400ยฐF (200ยฐC). Brush the cut sides of the acorn squash with 1 tbsp olive oil and season with salt and pepper. Place cut-side down on a baking sheet.

Roast squash for 30-40 minutes, or until fork-tender. Remove from oven and set aside.
