Moulah Charmoot with Kisra
Moulah Charmoot is a flavorful Chadian stew made with minced meat (charmoot) and tomatoes, often seasoned with onions and spices. It is traditionally served with Kisra, a fermented flatbread made from millet or sorghum flour, which acts as a perfect accompaniment to soak up the rich stew.

- 500 g Ground beef (charmoot)
- 2 medium Onions(finely chopped)
- 3 cloves Garlic(minced)
- 400 g Tomatoes(canned, crushed)
- 3 tbsp Vegetable oil
- 1 cup Water
- to taste Salt
- to taste Black pepper
- 1 tsp Chili powder(optional, for heat)
- 2 cups Millet flour(for Kisra)
- approx. 1.5 cups Warm water(for Kisra, adjust as needed)
- 1/2 tsp Salt(for Kisra)

For the Moulah Charmoot: Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sautรฉ until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the ground beef (charmoot) to the pot. Break it up with a spoon and cook until browned. Drain off any excess fat.

Stir in the crushed tomatoes, 1 cup of water, salt, pepper, and chili powder (if using). Bring the mixture to a simmer.

Cover the pot, reduce the heat to low, and let the stew simmer for at least 30 minutes, or until the flavors have melded and the sauce has thickened slightly.

While the stew simmers, prepare the Kisra: In a bowl, combine the millet flour and salt. Gradually add the warm water, mixing until a smooth, pourable batter forms. It should have a consistency similar to thin pancake batter.

Heat a lightly oiled non-stick skillet or griddle over medium heat. Pour about 1/2 cup of batter onto the skillet and swirl to create a thin, even layer, similar to a crรชpe.

Cook for 2-3 minutes per side, until lightly golden and cooked through. Repeat with the remaining batter to make several Kisra.

Serve the Moulah Charmoot hot, with the Kisra on the side for dipping and scooping.
