  • 1 large Yellow onion(quartered)
  • 4 cloves Garlic cloves(smashed)

  • 3 medium Carrots(peeled and cut into 1-inch chunks)
  • 3 medium Potatoes(peeled and cut into 1-inch chunks)
  • 2 medium Chayote squash(peeled, seeded, and cut into 1-inch chunks)
  • 2 ears Corn on the cob(cut into 2-inch pieces)
  • 1 cup Green beans(trimmed and cut into 1-inch pieces)
  • 1/2 cup Cilantro(chopped, for garnish)
