Kansiyé Stew
A rich and hearty peanut-based stew, Kansiyé is a traditional dish from Equatorial Guinea, reflecting the widespread use of peanuts in the country's cuisine. It features meat, often beef or goat, slow-simmered in a thick sauce made from groundnuts, tomatoes, and spices. This comforting stew is typically served with staple accompaniments like rice, cassava, or plantains, making it a popular choice for family meals and community gatherings, especially in rural areas where peanuts are a staple crop.

🧂 Ingredients
- 1 kg Beef or Goat(cut into 1-inch cubes)
- 2 cups Peanuts(roasted and ground into a paste)
- 400 g Tomatoes(diced)
- 2 large Onion(chopped)
- 4 cloves Garlic(minced)
- 3 tbsp Palm Oil
- 4 cups Water or Broth
- 1 tbsp Spices(such as cumin, paprika, and a pinch of chili powder)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black Pepper(freshly ground)
👨🍳 Instructions
- 1
Heat palm oil in a large pot or Dutch oven over medium-high heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.
- 2
Add the minced garlic and cook for another minute until fragrant.
- 3
Add the cubed meat to the pot and brown on all sides. This may need to be done in batches to avoid overcrowding the pot.
- 4
Stir in the diced tomatoes, ground peanut paste, spices, salt, and black pepper. Cook for 5 minutes, stirring to combine.
- 5
Pour in the water or broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for at least 3 hours, or until the meat is very tender and the sauce has thickened. Stir occasionally to prevent sticking.
- 6
Adjust seasoning if necessary. Serve hot with rice, boiled plantains, or cassava.
💡 Pro Tips
- ✓For a smoother sauce, you can blend some of the cooked stew before serving.
- ✓If you don't have pre-ground peanut paste, you can grind roasted peanuts in a food processor until a paste forms.
- ✓The longer the stew simmers, the more tender the meat will become and the richer the flavor will be.
