A delicate Caribbean fish dish where fish fillets are marinated in lime juice, herbs, and spices, then gently poached in a flavorful broth.

- 1.5 lbs Firm white fish fillets(such as snapper, cod, or mahi-mahi)
- 4 large Limes(juiced (about 1/2 cup))
- 1 medium Onion(thinly sliced)
- 3 stalks Scallions(sliced)
- 4 cloves Garlic(chopped)
- 0.5 bundle Fresh parsley(chopped)
- 2 small Hot peppers(thinly sliced (e.g., Scotch bonnet or habanero, adjust to taste))
- 1 cup Water
- 3 tbsp Olive oil
- 2 Bay leaves
