🧂 Ingredients

  • 1.5 lbs Firm white fish fillets(such as snapper, cod, or mahi-mahi)
  • 4 large Limes(juiced (about 1/2 cup))
  • 1 medium Onion(thinly sliced)
  • 3 stalks Scallions(sliced)
  • 4 cloves Garlic(chopped)
  • 0.5 bundle Fresh parsley(chopped)
  • 2 small Hot peppers(thinly sliced (e.g., Scotch bonnet or habanero, adjust to taste))
  • 1 cup Water
  • 3 tbsp Olive oil
  • 2 Bay leaves
  • to taste Salt
  • to taste Black pepper

👨‍🍳 Instructions

  1. 1

In a large bowl, combine lime juice, sliced onion, scallions, chopped garlic, chopped parsley, sliced hot peppers, water, olive oil, and bay leaves. Season with salt and pepper.

💡 Tip: You can add a splash of white wine for extra flavor if desired.
  2. 2

Add the fish fillets to the marinade, ensuring they are fully submerged. Cover and let marinate in the refrigerator for at least 3 hours, or preferably overnight.

  3. 3

Pour the marinade and fish into a saucepan or pot. Bring to a boil over medium-high heat, then reduce the heat to a simmer.

💡 Tip: Ensure the pot is large enough to hold the fish without overcrowding.
  4. 4

Gently place the marinated fish fillets into the simmering liquid. Cover the pot and poach for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. 5

Carefully remove the fish from the poaching liquid and serve immediately. Spoon some of the flavorful broth over the fish.

💡 Tip: Serve with rice, boiled plantains, or ground provisions.

💡 Pro Tips

  • The longer the fish marinates, the more flavorful it will be.
  • Be careful not to overcook the fish, as it can become dry.
  • Adjust the amount of hot peppers to control the heat level.

🔄 Variations

  • Add other seafood like shrimp or conch along with the fish.
  • Include other vegetables like diced tomatoes or bell peppers in the poaching liquid.
