Potato Leek Soup

- 1 kg Potatoes(starchy variety, peeled and diced)
- 500 g Leeks(white and light green parts only, cleaned and sliced)
- 2 medium Onion(finely chopped)
- 2 tbsp Butter
- 1 liter Vegetable broth
- 100 ml Heavy cream
- 0.5 tsp Nutmeg(freshly grated)

- 2 tbsp Fresh parsley(chopped, for garnish)

Peel the potatoes and cut them into small cubes. Chop the onions finely. Clean the leeks, slice them into half rings, using only the white and light green parts.

Melt the butter in a large pot over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

Add the sliced leeks to the pot and cook for another few minutes until they soften slightly.

Add the diced potatoes, vegetable broth, nutmeg, salt, and pepper to the pot. Bring to a boil, then reduce the heat, cover, and simmer for about 20-25 minutes, or until the potatoes are fork-tender.

Once the potatoes are tender, use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can carefully transfer the soup to a regular blender.

Stir in the heavy cream and heat through gently. Do not boil after adding the cream.
