  • 1 inch piece Ginger(grated)
  • 1 small Scotch Bonnet Pepper(finely chopped (or to taste, seeds removed for less heat))
  • 2 medium Tomatoes(diced)
  • 1/2 cup Vegetable Oil(for frying plantains and cooking sauce)
  • 2 tbsp Lime Juice
  • 2 cubes Maggi Cubes(crumbled)
  • to taste Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Fresh Parsley or Cilantro(chopped, for garnish)
