Cut the scallions into 1-inch segments. Thread the chicken pieces onto the soaked bamboo skewers, alternating with pieces of chicken skin (if using) and scallion segments. Aim for about 3-4 pieces of chicken per skewer. Ensure the ingredients are packed snugly but not overly compressed.
- 3⏱ 10-15 minutesGrill the YakitoriPreheat your grill to medium-high heat. If using charcoal, aim for consistent, hot embers (around 200-230°C / 400-450°F). Place the skewers on the hot grill. Grill for 3-5 minutes per side, turning frequently to ensure even cooking and prevent burning. During the last few minutes of cooking, generously brush the skewers with the prepared tare sauce on all sides. Continue grilling and basting until the chicken is cooked through, slightly charred, and the sauce is caramelized and glossy. The internal temperature of the chicken should reach 74°C (165°F).
