Kiribati Fish Curry

- 400 ml Coconut milk(full fat)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 0.5 tsp Cumin powder
- 0.5 tsp Chili flakes(or to taste)
- 2 medium Tomatoes(diced)
- 1 cup Leafy greens(such as spinach or local greens, chopped)
- 2 tbsp Vegetable oil
- to taste Salt
- 1 tbsp Lime juice(freshly squeezed)
- a handful Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sautรฉ until softened, about 5-7 minutes.

Stir in turmeric powder, coriander powder, cumin powder, and chili flakes. Cook for 30 seconds, stirring constantly, until spices are fragrant.
