Mauritanian Fish and Okra Stew
A savory and slightly tangy stew made with firm white fish, tender okra, tomatoes, and a blend of West African spices.

- 2 tablespoons Tomato paste
- 2 cups Vegetable broth
- 2 tablespoons Peanut butter(smooth or crunchy)
- 3 tablespoons Palm oil or vegetable oil
- 1 teaspoon Ginger(grated)
- 1/2 teaspoon Cayenne pepper(or to taste)

Season the fish chunks with salt and pepper. Set aside.

In a large pot or Dutch oven, heat the palm oil over medium heat. Add the chopped onions and sautรฉ until softened, about 5-7 minutes. Add the minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the crushed tomatoes and tomato paste. Cook for 5 minutes, stirring frequently, until the sauce darkens slightly.

Add the vegetable broth, peanut butter, and cayenne pepper. Whisk until the peanut butter is fully incorporated and the sauce is smooth. Bring to a simmer.
