๐ง Ingredients
- 500 g Dried fava beans(soaked overnight and drained)
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 1.5 teaspoons Cumin
- 1 teaspoon Coriander
- 0.5 teaspoon Turmeric
- 0.25 teaspoon Cayenne pepper(or to taste)
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground)
- 2 tablespoons Vegetable oil
- 6 cups Water or vegetable broth
- 2 tablespoons Lemon juice
- 0.25 cup Fresh parsley(chopped, for garnish)
๐จโ๐ณ Instructions
- 1
Place the soaked and drained fava beans in a large pot. Add the chopped onion, minced garlic, cumin, coriander, turmeric, cayenne pepper, salt, and black pepper.
- 2
Add the vegetable oil and pour in the water or vegetable broth. Ensure the beans are fully submerged.
- 3
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 45 minutes to 1 hour, or until the fava beans are very tender and starting to break down.
- 4
Stir occasionally to prevent sticking. If the stew becomes too thick, add a little more water or broth.
- 5
Once the beans are tender, stir in the lemon juice. Taste and adjust seasoning as needed.
- 6
Serve hot, garnished with fresh chopped parsley. This dish is often enjoyed with crusty bread for dipping.
๐ก Pro Tips
- โUsing dried fava beans provides the best texture, but canned beans can be used in a pinch (reduce cooking time significantly).
- โFor a creamier consistency, you can mash some of the beans against the side of the pot.
- โA pinch of dried mint can add a refreshing note.
