  • 2 medium Onions(finely chopped)
  • 4 cloves Garlic cloves(minced)
  • 1 inch piece Ginger(grated)
  • 400 g Tomatoes(chopped, or 1 can (400g) chopped tomatoes)
  • 400 ml Coconut milk(full-fat)
  • 2 tbsp Vegetable oil
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Garam masala
  • 1 small Cinnamon stick
  • 3 pods Cardamom pods(lightly crushed)
  • 2 whole Cloves
  • 1 leaf Bay leaf
  • to taste Salt
  • a handful Fresh coriander leaves(chopped, for garnish)
  • 1-2 Green chilies(optional, slit, for heat)
