🧂 Ingredients
- 6 tbsp Butter(unsalted)
- 4 medium Leeks(white and light green parts only, cleaned and sliced)
- 2-3 tsp Salt(to taste)
- 1/4-1/2 tsp Allspice(optional)
- 1/2 tsp Black pepper(to taste)
- 3/4 pound Potatoes(peeled and quartered)
- 3/4 pound Parsnips(peeled and cut into small pieces)
- 3 large Carrots(peeled and cut into rounds)
- 4 cups Fish stock
- 1 cup Heavy cream
- 1/2 pound Salmon(skin removed and cut into chunks)
- 1/2 pound Cod(skin removed and cut into chunks)
- 1 pound Shrimp(peeled and deveined)
- 1/3-1/2 cup Fresh dill(chopped)
👨🍳 Instructions
- 1
Melt butter in a large stockpot over medium heat. Add the cleaned leeks with salt and cook until softened, about 4-5 minutes.
💡 Tip: Ensure leeks are thoroughly cleaned to remove any grit. - 2
Add the potatoes, parsnips, carrots, fish stock, salt, and pepper. Bring to a boil, then cover and simmer until the vegetables are tender, about 15-20 minutes.
- 3
Reduce the heat to low. Stir in the heavy cream, salmon, cod, and shrimp. Stir continuously over low heat for 4-5 minutes, or until the fish and shrimp are cooked through.
- 4
Stir in the fresh dill. Taste and adjust seasoning if necessary.
💡 Tip: Do not overcook the seafood, as it can become tough. - 5
Serve hot, garnished with extra fresh dill. It pairs well with rye bread.
💡 Tip: For a thicker soup, you can add a roux (flour cooked in butter) before adding the stock.
💡 Pro Tips
- ✓You can substitute other white fish like haddock or wolffish for cod.
- ✓If fish stock is unavailable, vegetable broth or water with fish bouillon can be used.
- ✓For a lighter version, use half-and-half or whole milk instead of heavy cream.
