- 4 tbsp Olive oil
- 2 Large onions, chopped

- 400 g can Canned chopped tomatoes
- 200 ml Dry white wine
- 1 Bay leaf
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 400 g can Canned chickpeas, drained and rinsed
- 1/4 cup Fresh cilantro, chopped

In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp of olive oil over medium-high heat. Add the octopus pieces and sear for about 5-7 minutes, until lightly browned. Remove the octopus and set aside.

Add the remaining 2 tbsp of olive oil to the pot. Add the chopped onions and cook over medium heat until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
