  • 2 tbsp Olive oil
  • 3 tbsp Sofrito
  • 1 medium Onion(chopped)
  • 4 cloves Garlic(minced)
  • 2 tbsp Tomato paste
  • 6 cups Chicken broth
  • 1.5 cups Medium-grain rice
  • 1 tsp Adobo seasoning
  • 1 packet Sazón con culantro y achiote
  • 1 large Bay leaf
  • 1/2 cup Green peas(frozen or fresh)
  • 1/4 cup Pimiento-stuffed olives(sliced)
  • 1/4 cup Cilantro(chopped, for garnish)
