  • 1 medium Whole chicken(cut into pieces, or 3 lbs bone-in chicken thighs/legs)
  • 2 tablespoons Olive oil
  • 1/2 cup Sofrito
  • 1 medium Onion(chopped)
  • 4 cloves Garlic(minced)
  • 3 large Carrots(peeled and sliced)
  • 2 large Potatoes(peeled and cut into 1-inch chunks)
  • 2 ears Corn on the cob(cut into 2-inch pieces (or 1 cup frozen corn))
  • 8 cups Chicken broth
  • 1 packet Sazón seasoning
  • 1 teaspoon Adobo seasoning
  • 1 teaspoon Oregano(dried)
  • 1/4 cup Cilantro(chopped, plus more for garnish)
  • 1 cup Fideo pasta or small pasta
  • to taste Salt and pepper

  • For a thicker soup, you can mash some of the cooked potatoes against the side of the pot.
